Ethiopia Shakiso Natural
Here we have our first natural Ethiopian coffee for the 2020 harvest season! This gem comes from the Shakiso district within the highly praised Guji Zone of Ethiopia. This is a clean and structured coffee. Big notes of strawberry and lemon pastry hit first in the cup, with a deep white chocolate sweetness and a silky clean finish.
This coffee was grown by three small farmholders, Jilo Barko, Jarso Muda and Teklu Miju making up about 75 acres between them. It is common for top lots from Ethiopia to be from a combination of many small farmholders; limiting this offering to three producers ensures quality and consistency. Once picked, the ripe cherries are transported to the Guji Highland Coffee Plantation for further processing. At the mill, coffee cherries are meticulously sorted and dried on raised beds for 15-20 days, being turned often to ensure even drying. When moisture content hits 11%, these now dried cherries are sorted once again to ensure the highest quality. Processing is then completed at the dry mill and the beans are prepared for transport.
